Baked Cornflake-Crusted Orange Juice French Toast Sticks

When I was growing up, my mom was always making fresh
homemade orange bread. The house smelled divine, especially when she turned that orange bread into French toast. This version uses dairy-free bread with fresh orange juice and zest for a twist on my favorite French toast. I like to bake it. That way you are not standing over the stove while everyone else eats—you can sit down, eat together, and enjoy your kids’ giggles of delight!

Steps

Preheat the oven to 425°F/218°C. Line 2 baking sheets with parchment paper.

Cut each piece of bread into thirds and place the slices in an ungreased 9-by-13-inch baking dish.

In a large bowl, whisk the eggs, milk, orange juice, orange zest, vanilla, and cinnamon until well blended.
Pour the batter over the bread and let soak for 2 minutes, turning once and making sure all the bread pieces are well coated.

One at a time, gently transfer the French toast sticks to the prepared baking sheets, allowing the extra liquid to drip off into the baking dish.
Sprinkle each stick with cornflakes then flip and sprinkle cornflakes on the other side.

Bake for 6 minutes. Flip the French toast sticks and cook for minutes more, or until golden brown.

Sprinkle with confectioners’ sugar (if using) and serve with maple syrup.
