Everyday Oat Pancakes

These pancakes are a simple way to get kids eating heart-healthy
fiber and brain-boosting omega-3s first thing in the morning. But
these pancakes aren’t just for breakfast. You can use them as the
bread for peanut butter and jelly sandwiches for lunches and
snacks. They also freeze well, so double or triple the batter and
store some cooked pancakes in a sealed freezer bag in the freezer,
then thaw in the refrigerator the night before for a great grab-and go breakfast on busy mornings

Steps

Lightly coat a griddle with cooking spray. Heat the griddle over medium heat.

In a large bowl, whisk the flour, potato starch, baking powder, and salt to combine.

In a small bowl, whisk the eggs, milk, oil, maple syrup, and vinegar to blend.

Pour the wet ingredients into the dry ingredients and whisk just until combined.
The batter may be slightly lumpy.
Let stand for 5 minutes.

Reduce the heat under the griddle to medium-low.
For each pancake drop a scant ¼ cup of batter onto the griddle (you should be able to cook 3 or 4 pancakes at a time, depending on the size of your griddle pan).
Cook for 2 to 3 minutes, or until bubbles form.
Flip and cook for 2 minutes more, or until golden brown.
Repeat this process with the remaining batter.
