Tomato Basil Soup

This scrumptious soup is my kids’ absolute favorite.
Try this in summer when tomatoes are at their ripest and basil is plentiful.
Serve warm with a vegan grilled cheese sandwich and the crowd will go wild!

SIMPLIFY IT: Replace the fresh tomatoes with 2 (14.5-ounce) cans fire-roasted tomatoes and enjoy this soup year-round!

In a large saucepan over medium-high heat, combine the tomatoes, vegetable broth, carrot, onion, garlic, oil, basil, salt, and pepper. Cover the pan and bring the soup to a boil.
Reduce the heat to low and simmer the soup for 30 minutes.

Remove the pan from the heat. Using an immersion blender, or carefully transferring the soup to a standard blender and adding the lid (making sure to vent to allow steam to escape), puree the soup to your desired thickness.
If needed, return the soup to the heat to rewarm before serving. Garnish with fresh basil.
