Peanut Butter, Honey, and Oat Bites

I started giving these to my kids for breakfast when they were toddlers. They could pick them up with their tiny hands and not make too much of a mess. Now, I make them and keep them on hand for an anytime meal or snack. I even serve them to my kids as dessert if they “eat all their dinner” and, sure enough, those plates are usually licked clean!

Line a large storage container with parchment paper.

In a large bowl, combine the oats, flax meal, almond butter, honey, coconut oil, chia seeds, cinnamon, vanilla, and chocolate chips.
Mix well.

Using clean hands, roll the dough into 1- or 2-inch balls and set them directly into the storage container.
Cover and refrigerate for up to 5 days.
