Grain-Free Flatbread

This is a fast way to enjoy grain-free pizza crust. The bread can also
be used as a base for sandwiches or folded over like a pita. This
dough will yield four small crusts, or you can bake it as one large
12-inch crust. You can also double the recipe to make two large
crusts or eight small crusts.

Preheat the oven to 500°F/260°C. Line a baking sheet with parchment paper.

In a large bowl, whisk the yogurt, oil, vinegar, and 4 tablespoons of water to blend.

Add the cassava and arrowroot flours, flaxseed meal, baking powder, salt, and baking soda.
Using a rubber spatula, stir until a dough forms. If needed, add 1 more tablespoon of water.
The dough will be sticky but should form a dough ball.

Dust a clean work surface with cassava flour.
Using your clean hands, roll the dough into a ball and flatten it into a disk, or divide the dough into 4 disks.
Press the dough flat with your hands, then, using a rolling pin, roll out one disk to a 12-inch crust, or 4 small crusts, each to about ¼ inch thick.
Transfer the crust(s) to the
prepared baking sheet.

Bake for 10 minutes.

For pizza, top the crust with your preferred toppings and bake for 5 to 7 minutes more.

Freeze the cooked crusts in an airtight zip-top bag for up to 1 month.
