SUBSTITUTION TIP:
Alphabet pasta makes it fun for kids, but if you don’t have any on hand, star-shaped pasta, small shells, or macaroni also works well.
To make this soup gluten free, omit the pasta or use a gluten-free variety.

In a large pot over medium heat, heat the oil. Add the onion, carrot, celery, and garlic. |

Add the white beans, vegetable broth, tomatoes and green chilies, zucchini, Italian seasoning, bay leaf, nutritional yeast, salt, and pepper. Cover the pot and reduce the heat to low. |

Add the spinach, re-cover the pot, and cook for about 1 minute until the spinach wilts. |

Remove and discard the bay leaf. Taste the soup and season with salt and pepper, if needed. |

Stir in the cooked pasta right before serving and garnish with parsley. |
