Minestrone Alphabet Soup

This soup bursts with savory flavors and loads of vegetables that kids enjoy.
The leftovers are even better, as the flavors have time to settle and blend.

SUBSTITUTION TIP:

Alphabet pasta makes it fun for kids, but if you don’t have any on hand, star-shaped pasta, small shells, or macaroni also works well.

To make this soup gluten free, omit the pasta or use a gluten-free variety.

Steps

In a large pot over medium heat, heat the oil. Add the onion, carrot, celery, and garlic.
Sauté for about 5 minutes until tender and fragrant.

Add the white beans, vegetable broth, tomatoes and green chilies, zucchini, Italian seasoning, bay leaf, nutritional yeast, salt, and pepper. Cover the pot and reduce the heat to low.
Cook for 30 minutes.

Add the spinach, re-cover the pot, and cook for about 1 minute until the spinach wilts.

Remove and discard the bay leaf. Taste the soup and season with salt and pepper, if needed.

Stir in the cooked pasta right before serving and garnish with parsley.
