Sausage and Potato Breakfast Burritos

With three hungry boys in the house, this is a go-to weekend breakfast. It is full of hearty, flavorful sausage, sautéed potatoes, and scrambled eggs. It keeps them going before games on weekends. This is an excellent protein-filled meal that can be ready at a moment’s notice.

LEFTOVERS:

Serve leftover burritos another morning, or for lunch or dinner.

They will last, covered and refrigerated, for 1 day with avocado and for 3 days without.

Wrap individually in parchment paper, then wrap in foil. Seal tightly.

Reheat on a baking sheet, covered with foil, in a 350°F/177°C oven for 15 minutes, or until warm.

You can also microwave them on high power for about 1 minute.

In a large skillet over medium-high heat, heat 1 tablespoon of oil.
Add the potatoes and cook for 10 minutes, stirring regularly, or until cooked through.
Transfer to a medium bowl and cover to keep warm.

Return the skillet to medium-high heat and add the sausage and cumin.
Cook, breaking up the sausage as you stir, for 5 to 7 minutes, or until the sausage is cooked through and no pink remains.
Add the sausage to the potatoes and re-cover.

In a large bowl, combine the eggs, milk, and salt and season with pepper to taste.
Whisk for 30 seconds to blend.

In a medium skillet over medium-low heat, heat the remaining 1 tablespoon of oil.
Pour in the eggs and let cook for 1 minute without stirring.
With a wooden spoon or heatproof rubber spatula, cook, stirring the eggs constantly, for about 2 minutes more, or until fully cooked.
Gently stir in the cooked potatoes and sausage.

Set out 4 plates. Place 1 tortilla on each plate. Put an equal amount of sausage and egg mixture in the center of each tortilla.
Add avocado slices (if using). For each burrito, fold in the sides toward the middle then, starting at the end closest to you, roll up the burrito.
Serve topped with salsa or ketchup (if using).
