LEFTOVERS:
Serve leftover burritos another morning, or for lunch or dinner.
They will last, covered and refrigerated, for 1 day with avocado and for 3 days without.
Wrap individually in parchment paper, then wrap in foil. Seal tightly.
Reheat on a baking sheet, covered with foil, in a 350°F/177°C oven for 15 minutes, or until warm.
You can also microwave them on high power for about 1 minute.

In a large skillet over medium-high heat, heat 1 tablespoon of oil. |

Return the skillet to medium-high heat and add the sausage and cumin. |

In a large bowl, combine the eggs, milk, and salt and season with pepper to taste. |

In a medium skillet over medium-low heat, heat the remaining 1 tablespoon of oil. |

Set out 4 plates. Place 1 tortilla on each plate. Put an equal amount of sausage and egg mixture in the center of each tortilla. |
