Place a nonstick saucepan over high heat and add the milk. Bring to a boil. |

When the milk has cooled to 114°F/45°C or is lukewarm, add the yogurt and stir gently with a spoon or whisk. |

Transfer to an earthenware pot and set aside in a warm place overnight until the mixture thickens. |

When the yogurt has thickened, transfer to the refrigerator. |
